Marinated Roasted Bear

Young bear is delicious roasted as you would pork. Cook it about 30 minutes to the pound (456 g), or longer if you a like well–done roast. Select a 3 to 4 pound (1.4 to 2.8 kg) roast, rinse, wipe with a cloth to clean. Place in a large bowl and cover with half vinegar and half red wine. Let soak in a cool place at least three hours or overnight. Save liquid. Season roast with salt, pepper, allspice, garlic, thyme and marjoram. Sear in a little fat in a Dutch oven. When very brown, add wine and vinegar, about 1½ cups (360 mL). Cook slowly until tender.
